Denn nichts davon geh\u00f6rt in eine der simpelsten, aber doch schmackhaftesten Pasta-Kreationen, die die italienische K\u00fcche zu bieten hat. \u201eIch habe schon oft in Deutschland Carbonara gegessen, aber leider macht ihr das falsch\u201c, sagt der aus Kalabrien stammende Francesco Marino. \u201eSahne und Schinken geh\u00f6ren da gar nicht rein, auch kein Parmesan. Daf\u00fcr aber Speck, Eier und Pecorino-K\u00e4se. Der sei wichtig, weil er im Gegensatz zum Parmesan salziger sei und dem Gericht einen intensiveren Geschmack verleihe.\r\nDie typischerweise verwendete Schweinebacke (italienisch: Guanciale) sowie den Pecorino (Schafmilchk\u00e4se) bekommt man in Deutschland \u00fcbrigens beim Metzger, in gut sortierten Superm\u00e4rkten oder im italienischen Feinkosthandel.<\/div>\n<div
