Dabei das Fett und auch Sehnen belassen.<\/div><\/li><li id=\"wprm-recipe-1534-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Schmalz in einem m\u00f6glichst weiten Schmortopf sehr stark erhitzen und das Fleisch darin bei starker Hitze scharf anbraten, bis es rundum sch\u00f6n braun ist. Die St\u00fccke d\u00fcrfen dabei nicht \u00fcbereinanderliegen und die Hitze muss stark genug sein, sonst zieht das Fleisch Wasser und d\u00fcnstet, anstatt zu braten. Gr\u00f6\u00dfere Mengen daher lieber in Etappen r\u00f6sten.<\/div><\/li><li id=\"wprm-recipe-1534-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Das Fleisch danach auf einen Teller geben und beiseite stellen.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">ZWIEBEL R\u00d6STEN <\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1534-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Inzwischen die Zwiebeln sch\u00e4len und in kleine W\u00fcrfel schneiden. Schneiden, nicht hacken!<\/div><\/li><li id=\"wprm-recipe-1534-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Wieder etwas Schmalz in den Topf geben, wieder sehr stark erhitzen und die erste H\u00e4lfte der Zwiebeln r\u00f6sten.<\/div><\/li><li id=\"wprm-recipe-1534-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Sobald diese zu br\u00e4unen beginnt, kann auch die zweite H\u00e4lfte dazu geben. Dadurch wird \u2013 wie beim Fleisch \u2013 das Austreten des Safts vermieden.<\/div><\/li><li id=\"wprm-recipe-1534-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Anschlie\u00dfend den Zucker dazugeben und, sobald auch die zweite H\u00e4lfte der Zwiebeln beginnt zu br\u00e4unen, die Hitze leicht reduzieren. Die Zwiebel nun langsam mindestens 20 Min. r\u00f6sten lassen. Diesem Prozess ist die ganze Aufmerksamkeit zu widmen, denn die Zwiebeln bilden die Basis des Gulaschs!<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">AUFGIESSEN UND W\u00dcRZEN<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1534-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Das Fleisch samt ausgetretenem Bratensaft wieder in den Topf geben und mit dem Bier aufgie\u00dfen. Aufkochen und die Fl\u00fcssigkeit reduzieren, bis sie fast vollst\u00e4ndig verdunstet ist.<\/div><\/li><li id=\"wprm-recipe-1534-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Die K\u00fcmmelsamen grob hacken, mit Majoran und beiden Sorten Paprikapulver zum Gulasch geben und einige Zeit durchr\u00fchren, bis es dunkel wird.<\/div><\/li><li id=\"wprm-recipe-1534-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mit Essig abl\u00f6schen und mit so viel hei\u00dfem Wasser aufgie\u00dfen, dass das Fleisch zu zwei Dritteln mit Fl\u00fcssigkeit bedeckt ist. Die Markknochen dazugeben, das Wasser aufkochen und etwa 15 Minuten k\u00f6cheln lassen.<\/div><\/li><li id=\"wprm-recipe-1534-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Den Ofen auf 140 \u00b0C Ober-\/Unterhitze vorheizen.<\/div><\/li><li id=\"wprm-recipe-1534-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Das Gulasch mit Salz abschmecken und eventuell die Kirschpaprika dazugeben. Diese vorher aufschneiden, die Samen entfernen und gut auswaschen. Die Sch\u00e4rfe ist ausreichend.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">SCHMOREN<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1534-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Den Topf mit einem Deckel verschlie\u00dfen und im Ofen 2\u20133 Stunden schmoren. Diese Zeit kann auch aufgeteilt werden: Beispiel nach 1 Stunde aus dem Ofen nehmen und am n\u00e4chsten Tag weitergaren. - z.B. das Gulasch am Vormittag aufsetzten - am Nachmittag weiterkochen und dann \u00fcber Nacht im K\u00fchlschrank. Am n\u00e4chsten Tag weiterkochen, so lange bis das Gulasch fertig ist. Die Ruhezeiten und mehrmaligen Aufw\u00e4rmphasen verbessern den Geschmack deutlich.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">AUFW\u00c4RMEN<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1534-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mindestens einmal \u00fcber Nacht ruhen lassen und fr\u00fchestens am n\u00e4chsten Tag zum Essen aufw\u00e4rmen.
