Dieses Rezept nur eine Version. Drei Gem\u00fcsesorten sollten aber nicht fehlen: Zwiebel, Staudensellerie und Paprika (meist gr\u00fcn). Was das Fleisch betrifft, ist alles erlaubt: Fast obligatorisch ist aber die Zugabe von Andouille, einer ger\u00e4ucherten Wurst aus Schweinefleisch. Jegliches Gefl\u00fcgel oder Meerestiere sind ebenfalls oft in einem Gumbo zu finden, auch Rindfleisch wird verwendet, ben\u00f6tigt aber wesentlich l\u00e4nger zum Kochen. F\u00fcr Gumbos werden \u00fcbrigens nicht die Filetst\u00fccke verwendet \u2013 Truthahnhals oder Ochsenschwanz tun es vollkommen. Zum Servieren wird Gumbo h\u00e4ufig mit gehackter Petersilie oder Fr\u00fchlingszwiebelgr\u00fcn bestreut. Ein Muss ist wei\u00dfer Reis als Beilage. Paprika, Pfeffer und Cayennepfeffer mischen und das grob geschnittene Fleisch mit der H\u00e4lfte dieser Gew\u00fcrzmischung w\u00fcrzen.<\/div><\/li><li id=\"wprm-recipe-1447-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Etwas \u00d6l in die Pfanne zugeben, in der die Wurst angebraten wurde, und H\u00fchnerfleisch von beiden Seiten insgesamt rund 10 Minuten golden anbraten. Aus der Pfanne heben und beiseite stellen, das \u00d6l zum Braten des Gem\u00fcses in der Pfanne lassen.<\/div><\/li><li id=\"wprm-recipe-1447-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Zwiebel, Paprika, Sellerie und Okra rund 10 Minuten bei mittlerer Hitze anbraten, in den letzten 2 Minuten Knoblauch und den Rest der Gew\u00fcrze mitd\u00fcnsten. Gem\u00fcse aus der Pfanne geben und beiseite stellen.<\/div><\/li><li id=\"wprm-recipe-1447-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Roux zubereiten: Eine Pfanne mit schwerem Boden eignet sich hierf\u00fcr am besten. In der sauberen Pfanne (ohne Fleisch- oder Gem\u00fcser\u00fcckst\u00e4nde) \u00d6l erhitzen und langsam mit einem Schneebesen das Mehl einr\u00fchren. Die Einbrenn rund 30 Minuten bei mittlerer Hitze unter st\u00e4ndigem R\u00fchren mit einem Holzkochl\u00f6ffel br\u00e4unen. Dabei darauf achten, dass nichts anbrennt (= bitter), sonst muss von vorne begonnen werden. Das Mehl soll gegen Ende Karamell-farben sein. Die Zubereitung funktioniert notfalls auch mit einer beschichteten Alupfanne, allerdings ben\u00f6tigt das Erreichen eines dunklen Roux l\u00e4nger. W\u00e4hrenddessen die hei\u00dfe Suppe und zus\u00e4tzlich einen gro\u00dfen Topf bereitstellen.<\/div><\/li><li id=\"wprm-recipe-1447-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Angebratenes Gem\u00fcse und Roux in dem gro\u00dfen Topf \u00fcber mittlerer Hitze vermengen. Dann langsam rund einen Sch\u00f6pfl\u00f6ffel hei\u00dfe Suppe in den Roux-Gem\u00fcsetopf einr\u00fchren. Sobald sich die Suppe gut mit dem Rest verbunden hat, den n\u00e4chsten Sch\u00f6pfl\u00f6ffel einr\u00fchren. Auf diese Weise rund einen halben Liter Suppe zugeben.
